High-quality extracts must have minimal citrinin levels that are not capable of causing harm to the human body. It is not possible to eliminate it completely because its production is part of the metabolism of Monascus purpureus, and even when the extract is produced using the best available techniques, a very small amount remains. The extract used to make Ateronorm contains less than 20 parts per billion, an insignificant amount that is also difficult to detect because it is so low. This means that in the finished product, citrinin is present at even lower levels.
